About Ada
Ada operates as a culinary studio in the heart of Charlottetown. From ticketed public dinners to private events, full-service catering, and a daily Grab & Go, everything begins in the same evolving kitchen.
A Culinary Studio
Ada was built as a culinary studio — not simply a restaurant. The space shifts and adapts, hosting intimate seated dinners, standing receptions, corporate gatherings, and everyday counter service.
Rather than centering around one format, Ada moves between experiences while maintaining a consistent approach: seasonal menus, thoughtful preparation, and a focus on intention.
Why “Ada”?
Ada is named after Chef Adam Loo’s great grandmother — and his daughter. The name reflects continuity: respect for the past and care for what comes next. The logo itself is taken from Adam’s grandmother’s handwriting.
It represents lineage, family, and the rituals that gather people around food.

From the Kitchen
Adam’s earliest memories in the kitchen were alongside his grandmother, helping her make cookies. Those early experiences shaped a lifelong respect for craft, patience, and the quiet importance of food in everyday life.
He later grew up in a family of farmers. His father, Raymond Loo, was a pioneer in organic farming on Prince Edward Island and instilled a deep appreciation for the work behind food production.
That influence continues at Ada — in the sourcing of ingredients, the development of menus, and the belief that good food begins long before it reaches the plate.
Our Team
Ada is built by a team of cooks, servers, and collaborators at different stages of their careers. Each contributes to research, menu development, and execution across public events, private gatherings, catering, and Grab & Go.
The studio model encourages collaboration. Ideas are shared, refined, and tested together — turning individual skill into collective execution.

Our Purveyors
Ada works closely with local purveyors and producers across Prince Edward Island. These relationships are foundational to the studio’s approach.
We partner with suppliers who share a commitment to quality and responsible practices. To us, they are collaborators — not simply vendors.
Their work shapes our menus as much as our own.
